In a high sided large bowl or vase like container, mix the aquafabaa, apple cider vinegar, maple syrup and salt.
If you don't own an immersion blender this can be done in a regular blender.
Using an immersion blender, slowly pour the 3 cups of oil into the bowl while blending. This will create the mayonnaise emulsification immediately.
Yields 24 oz. Keeps for 2-3 weeks in the refrigerator.
