In a bowl or large measuring cup combine milk, salt, and apple cider vinegar.
In a small sauce pot melt butter over medium heat and then whisk in the flour.
Let the roux cook while stirring constantly for a minute or two then add the nutritional yeast and spices.
Next slowly pour the milk into the roux. Still stirring constantly so it doesn’t get clumpy. Once fully together stir regularly over medium low heat so it doesn’t burn. It takes about 5 minutes to thicken. It should be creamy and coat the whisk or a spoon.
At this point you can add other cheeze to the sauce if you’d like. Violife cheddar works great!
Pour over cooked noodles and try not to eat it all in one meal.
