Malfalde Pasta is typical of Naples, Italy. Named in honor of Princess Mafalda of Savoy and the Italian word reginette which is Italian for ‘little queens’. The ridges on malfalde do a 'queen wave' as it comes out of the machine. Malfalde is typically served with vodka sauce and basil or other delicate sauces.
Our 'long shape' pastas are weighed to 1lb before we start the drying process. They ship dried.
